Pollo Asada Kabobs

Twin “flamed grilled” Asada Chile marinated Chicken Kabobs skewered with Sweet Peppers and Onions.


BBQ’d Beef Kabobs

Twin “flamed grilled” Beef Shoulder Tenderloin Kabobs seasoned with our Southwest Asada Chile marinade and skewered with Sweet Peppers and Onions


BBQ Baby Back Ribs

A Full Rack of “slow roasted” BBQ Baby Back Ribs brushed with our “sweet ‘n zippy” homemade BBQ sauce. (This selection is served with Sweet Potato Fries, creamy Cole Slaw and a warm Corn Muffin)


Southwestern Mixed Grill

A half Rack of Sam’s BBQ Baby Back Ribs along with a Grilled Chicken Asada Kabob with Sweet Peppers ‘n Onions.


Coconut Crusted Chicken

Twin Chicken Breasts “pan seared” with a crunchy coating of seasoned Panko Bread crumbs, finished in a Dark Rum, Coconut and Pineapple sauce then topped with Toasted Coconut.


West Texas BBQ Chicken

A Chicken Breast “pan sauteed” with crunchy Panko Bread crumbs, topped with melted Habanero Jack Cheese and a swirl of Honey BBQ sauce; served over a bed of crispy fried Tortilla Strips.


Steak Cheyenne

A 10 oz. “flame grilled & sliced” Bistro-style Shoulder Tenderloin Steak marinated in our Southwest Chile seasoning, then topped with Sweet Caramelized Onions and crumbled Cotija Cheese.


New York Sirloin

A 12 oz. Center-cut N. Y. Sirloin Steak basted with Garlic Butter and “flame grilled” to order.


California Cod

Cod filets “pan seared” with a coating of crunchy seasoned Panko Bread crumbs then placed over a bed of freshly sauteed Baby Spinach, Garlic & Roasted Red Peppers; topped with a ribbon of “Smokey” Chipotle Aioli.


Cod Diego

Cod filets baked “en casserole” with our Mexicali Red sauce, then topped with melted Cheddar Cheese, “golden Brown” Panko Bread crumbs and Pico de Gallo.
